Blistered Roast Cherry Tomatoes

For this week’s Sunday Supper, we are featuring a simple and healthy recipe to celebrate one of summer’s favorite foods, tomatoes. Did you know that tomatoes contain an antioxidant called lycopene, which helps the heart and can help prevent some kinds of cancer? They also contain vitamins A and C, as well as potassium and calcium. When they are juicy, sweet and ripe, tomatoes are a delicious addition to any meal. The secret to this recipe is making your own Italian Seasoning and grinding it fresh over the tomatoes. Developed by our own Kate Gilbert, who oversees FinaMill’s social media, Blistered Roast Cherry Tomatoes can be paired with anything from pasta and rice to your favorite cheese. Just add some fresh, crunchy bread and you have the perfect summer meal.

Ingredients for Meal

Ingredients to make Italian Seasoning

  • 1 Tbsp. dried basil
  • 1 Tbsp. dried thyme
  • 1 Tbsp. dried rosemary
  • 1 Tbsp. dried marjoram
  • 1 Tbsp. dried parsley
  • 2 Tbsp. dried oregano
  • 1 tsp. red pepper flakes, optional

Directions To Make Italian Seasoning

1. Place all dried herbs into a bowl and mix well.

2. Pour mixed herbs into a FinaPod MAX and grind fresh for the recipe.

Directions to Make the Blistered Roast Cherry Tomatoes

1. Preheat oven to 425 degrees.

2. Drizzle the tomatoes with oil.

3. Grind all seasonings on top of the tomatoes.

4. Salt and pepper to taste.

5. Toss all the ingredients to coat the tomatoes.

6. Put the tomatoes in a baking dish or on a baking tray.

7. Roast for 15 minutes on a rack in the top 1/3 of the oven.

8. Turn on broiler and broil until charred bits appear. Keep a close eye on them so that they don’t burn.

9. Serve on pasta, rice, or just slathered on bread. Don't forget to keep the juices in the bottom of your pan when you transfer the tomatoes.
