Cauliflower with Gravy and Cavatelli
This week’s Sunday Supper comes from our good friend Christina Pirello, host of Christina Cooks: Back to the Cutting Board , the Emmy Award-winning television series on American Public Television. Christina is a passionate advocate for plant-based, healthy eating and today she is sharing a recipe for Cauliflower Puttanesca Over Cavatelli. Cauliflower with a Puttanesca style sauce has been one of Christina’s favorite recipes for a long time. Recipe Makes 2 to 3 Servings
Ingredients:
- Extra virgin olive oil
- 1 Tbsp. of freshly ground dried garlic (Ground fresh in a FinaPod Pro Plus)
- Pinch of Coarse Sea Salt (Ground fresh in a FinaPod Pro Plus)
- Generous pinch of crushed red pepper flakes
- 1/2 red onion, diced
- 2 cups small cauliflower florets
- 1 32-ounce can of diced tomatoes
- 3-4 Tbsp. of capers, drained, but not rinsed
- 12-18 oil-cured black olives, pitted, coarsely chopped
Directions:
1. Place a small amount of oil into a skillet over medium heat.
2. Add the diced onion, dried garlic, crushed red pepper flakes and a pinch of sea salt and sauté for 1-2 minutes.
3. Add cauliflower, tomatoes, capers and olives and stir well.
4. Season lightly with small amount of salt and cook, stirring occasionally for 15 minutes or until cauliflower is quite tender.
5. Serve with crusty whole grain bread over pasta.
