Tara Teaspoon’s Grilled Fish with Caper-Herb Salsa and Corn
Recipe Serves 3-4
With its smoky flavor, quick cooking time and high nutritional value, fish is a great choice for summer grilling. This week’s Sunday Supper, Grilled Fish with Caper-Herb Salsa and Corn, comes from our good friend Tara Teaspoon.

Ingredients
Salsa:
- 2 Tbsp chopped mint
- 3 Tbsp chopped flat-leaf parsley
- 1 cup chopped white onion
- 2 Tbsp chopped capers, rinsed if packed in salt
- 1 tsp coarse salt (Ground in a FinaMill Everyday Pod)
- ¼ tsp black pepper (Ground in a FinaMill Pepper Pod)
- 2 Tbsp lime juice
- 3 Tbsp olive oil
Corn and Fish:
- 4 ears of husked corn
- 2 Tbsp olive oil
- 1 clove garlic minced
- 1 tsp coriander (Ground in a FinaMill Everyday Pod)
- 1 tsp coarse salt (Ground in a FinaMill Everyday Pod)
- ¼ tsp black pepper (Ground in a FinaMill Pepper Pod)
- 1 ¼ lbs. fish fillets, snapper, bluefish or cod
- Sprigs of mint
Instructions
The Finished Dish:
1. Prepare the Salsa
For salsa, combine the mint, parsley, onion, capers, salt, pepper, lime juice and olive oil. Set aside.
2. Grill the Corn
Rub corn with extra oil and grill over medium-high heat until slightly charred, about 10 minutes.
3. Season the Fish
While corn cooks, combine olive oil, garlic, coriander, salt and pepper and rub mixture over fish. Place fillets in a grill basket with a few sprigs of mint.
4. Grill the Fish
Grill, turning once, until fish is cooked through, 8 to 10 minutes total.
5. Serve
Cut corn from cobs and serve alongside the fish. Top fish with salsa and mint sprigs.
A Tip from Tara
Using a grilling basket with BBQ works great for fish and other delicate meats, veggies like asparagus and those that you cut up. Tomatoes and tomatillos work well in a basket also. Of course, you can broil the fish in the oven or fry it on the stove but grilling it in a basket gives it that smokey flavor that only comes from the BBQ.
